Last Thursday was Taco Thursday! (Or as some say, Thaco Thursday :o)
- Oven roasted spicy sweet potatoes with a hint of cayenne
- Black beans made in the instant pot & mashed lightly
- Topped with sliced lettuce, mashed avocado, toasted pepitas, & crumbled Violife feta — wrapped in a warm corn tortilla
